Late May into the first half of June, or the back half of September. Those are the two windows where Corfu gives you warm water, a full island and light worth getting up for, without the August pattern of full flights and full beaches — and of the two, September edges it if swimming matters most, May if walking does.
Why the season starts and ends where it does
Rain sets the outer brackets. The Ionian catches Atlantic weather the Aegean never sees, and Corfu takes a proper winter of it, which is why the island is green in a month when the Cyclades have gone to gold and straw. That same rain closes the calendar early at one end and opens it late at the other: coastal hotels and beach tavernas run to a season built around it, and outside that season a good deal of the coast simply shuts.
Wind matters far less here than it does further east. There is no meltemi in the Ionian, so boat days and open-water swimming are governed by the forecast for that week rather than by a prevailing summer pattern. It is one of the real arguments for Corfu over an Aegean island of similar price.

What each shoulder trades away
Spring hands you the island in bloom and the sea still cold. Hillsides are green, the olive terraces are working, and the walking routes across the interior are usable in the middle of the day — but the sea takes until early summer to become genuinely pleasant, and a spring week can lose an afternoon to weather.
Autumn reverses every term of that. The water is still carrying the heat the summer put into it, with its annual peak just behind rather than ahead, which makes it far warmer than anything spring can offer; the crowds have gone home; and the light through the olive groves in late September is worth seeing. The risk moves to the sky: the first real storms of the Ionian autumn can arrive before the month is out, and evenings close in noticeably earlier than they did in June.
The weeks to think twice about
Late July and the whole of August. Corfu takes a heavy charter and ferry load then, and the northern and western resort strips fill accordingly; the old town in the middle of a hot afternoon is an endurance exercise rather than a pleasure. Anyone tied to school holidays can still have a good week here — the families page deals with how — but everyone else should take one of the shoulders and pocket the difference.
Out of season, when the town is the island
Corfu Town is a working city with a port, a university and a year-round population, so it does not close when the coast does. A winter visit is a genuine option for anyone who wants arcades, museums and long lunches rather than a beach, and the rain is the price of that. What you cannot do out of season is the island: the coast road empties, and most of what makes the rest of Corfu worth the flight is shut.
A date that overrides the rest of this
Orthodox Easter is celebrated in Corfu Town with a great deal of ceremony, and the town is full for it. If the dates line up with your spring, take them; if they do not, book around them, because rooms go early and the island is not quiet that week.
