May is the month to walk Santorini, and that is the whole case for it. Every part of this island that involves effort — the clifftop path, the climb to the ruined city, the lanes through the interior — is pleasant in May and punishing from July. The trade is the sea, which has not yet caught up with the air, and a visitor who intends to spend the week swimming has picked the wrong month.

Why the walking matters more here than elsewhere
Santorini's shape means almost everything worth seeing involves going up or down. The villages are built into a cliff face and joined by a footpath along the top of it; the sites are on high ground; nothing is level except the south-east shore. In high summer that geography turns into a logistical problem solved with taxis, buses and early starts. In May it is simply a walk, and the island rearranges itself accordingly — you see the interior, which most visitors never do, because in May it costs you nothing to cross it on foot.
The light helps too. Days are long enough by May to give a full morning and a full evening, and the volcanic ground has not yet bleached out, so the terraces still carry some green early in the month. By the end of it the island is drying towards its summer colour, which is worth knowing if you are choosing between the start and the finish of May.
The sea, stated plainly
Aegean water is at its coolest of the whole season in spring. It warms slowly through May and it does not become the kind of sea you linger in until later, whatever the air temperature suggests. Swimming happens; extended swimming does not. The boat days run and the coast below the cliffs is as good as it ever is, but expect the water to be a brief pleasure rather than the point of the day.
If wine is more your interest than water, this is a good month for it. Santorini Wine Adventure with 12 Wine Tastings, Tapas and Sunset is a small-group afternoon among the island's wineries that ends at sunset, and it is entirely unaffected by whether the sea is warm — vines and tastings work in May exactly as they work in August, and the vineyards are green at this point in the year.
What is open, and what is not quite
Most of the island is running by May: hotels, tavernas, buses, the boats out of the southern marina. What is inconsistent is the shoulder-season detail — the smaller places in the interior keeping shorter hours, hotel pools that are technically open and genuinely cold, a beach club or two still setting up. Pegasus Suites & Spa on the Imerovigli ridge holds its pool open beyond the ordinary season and carries a spa with a hammam and steam room, which is a sensible answer to a month whose outdoor water is not always inviting.
